BACON & GRUYERE EGG BITES – STARBUCKS COPYCAT RECIPE
Ingredients
- 4 slices Bacon, diced
- 6 Eggs
- 1 1/3 cups Cottage Cheese (4%)
- 1 1/4 cups Gruyere Cheese, shredded
- 1/4 teaspoon Salt
- 1/8 teaspoon Black Pepper
- 1 teaspoon Hot Sauce
- 1/8 teaspoon Cayenne Pepper
- Fresh Parsley
Instructions
- Preheat oven to 300° Place glass baking dish in bottom of oven and fill with boiling water.
- Spray non-stick mini muffin pan with cooking spray.
- Cook Bacon and chop into small chunks.
- In blender: eggs, cottage cheese, Gruyère, hot sauce, salt, pepper and cayenne. Blend until completely smooth (about 45 seconds)
- Fill each muffin tin 3/4 full with egg mixture and top with bacon.
- Bake 20-23 min. (Until set)
- Top with fresh parsley and serve immediately
Freeze Instructions
- Once egg bites have cooled, place them in container in freezer. The night before you plan to eat, place them in the refrigerator and warm them up the next morning using the ‘defrost’ setting on your microwave.
