Vanilla Buttercream for Funfetti Birthday Cake

Make your own Vanilla Buttercream from scratch for a delicious Funfetti Birthday cake! The homemade buttercream and 3 layers takes a little extra time but it’s well worth it and a fun presentation!

This recipe is for the Buttercream Icing. I’m all about homemade scratch cakes but I’ve tried and tested several yellow cake recipes and can’t say I’ve found one that we liked enough to want to make again. The quest is still on. Till I find one I like, it’s difficult to match the taste and texture of those box mixes with pudding in the mix. The rainbow sprinkles are my kids’ favorite. Please share if you’ve found a vanilla cake recipe. I’d love to try it.

VANILLA BUTTERCREAM Icing for a FUNFETTI BIRTHDAY CAKE

Makes: 1 (6″) 3 Layer Cake

Ingredients

FOR THE CAKE

  • 2 Yellow or Funfetti Box Mixes

FOR THE BUTTERCREAM

  • 2 sticks Butter
  • 1/8 teaspoon Salt
  • 3 cups Powdered Sugar, sifted
  • 3 tablespoons Heavy Cream
  • 1 teaspoon Vanilla Extra

Instructions

FOR THE CAKE

  • Line (3) 6” round cake pans with cooking spray and parchment paper.
  • Mix and Bake cake according to directions on the box (optional:add 1/4 rainbow sprinkles)

FOR THE BUTTERCREAM

  • In stand mixer, beat butter until creamy.
  • Gradually add in powdered sugar.
  • Once everything is mixed in, add in heavy cream, salt and vanilla. Mix until light in color and fluffy.
  • Frost
